I love the idea of having a birchwood handle, such a brilliant idea. It feels luxurious every time when I touch the handle. I always say the perfect way to test whether a knife is precise enough is to see how many slices of tomatoes one can get trying to cut the thinnest slices, and this knife definitely passes my test. On the maintenance side, it takes a little more extra care because of the birchwood handle. You can’t really throw it into the dishwasher. I clean it right away every time after use. Love it!
