Recently purchased this knife after seeing my best friend use it. Love the versatility of being able to use it for both cutting with a rocking motion, as well was using the traditional Japanese up and down chopping motion. Very comfortable, and the FC61 steel that it is made with is very durable which adds to the benefit of working with this knife. This is a must have for anyone that loves to work in the kitchen with great tools!

This shape is new to me. Its a hybrid of a regular Chefs knife and a traditional Santoku. The curved shape makes quick work of my chopping and mincing and the thin profile of the blade makes nice thin slices. I like the traditional Western style handle combined with the Japanese blade. The best of both worlds. The blade is very sharp and easy to maintain.
The Santoku is one of my favorite knives to use in the kitchen due to the versatility of the blade profile. You can use the santoku on meat, poultry and vegetables, and will find that it is easy work with the three-rivet handle which fits perfectly in the hand. This knife is sharp and will retain it sharpness due to the FC61 steel and the special ice-hardening process.
