Great combination of east and west

I love using santoku knives because I like the wider blade they have so that I can move more food from the cutting board to the pan at one time, but I also like the curve of a chef's knife, which is typically a western style knife, so it is easy to use a rocking/slicing motion and easy cut quickly and in one motion. This is a great compromise between those 2 styles and the handle is comfortable.

Super strong steel honed by hand in Seki...so razor sharp and tough. Hollow edge for preventing food sticking to blade and one of the most comfortable handles in the biz.

The Santoku is one of my favorite knives to use in the kitchen due to the versatility of the blade profile. You can use the santoku on meat, poultry and vegetables, and will find that it is easy work with the three-rivet handle which fits perfectly in the hand. This knife is sharp and will retain it sharpness due to the FC61 steel and the special ice-hardening process.

new shape great results

This shape is new to me. Its a hybrid of a regular Chefs knife and a traditional Santoku. The curved shape makes quick work of my chopping and mincing and the thin profile of the blade makes nice thin slices. I like the traditional Western style handle combined with the Japanese blade. The best of both worlds. The blade is very sharp and easy to maintain.
