Evolution has always been my favorite line of knives from Miyabi. Very approachable, easy to care for and familiar in the hand. This knife is great for the person who likes to use a chef but wants the attributes of a Santoku. Super sharp edge can make smooth cuts through the toughest produce.

This is a wonderful knife, a thin profile razor sharp Japanese blade with a western style handle. Forged from FC61 steel which attains 61 on the hardness scale and is able to be honed into an extremely sharp edge that will stay that way longer. The patented ice hardening process ensures this knife will be resistant to chipping and cracking.

I love Rocking

A rocking santoku is the perfect knife for me. I am a rocker when I cut up veggies and this design helps me be super efficient. The incredibly sharp, razor edge slices through an onion so perfectly that there are no tears. The "dimples" on the blade help keep food from sticking.
Evolution is an authentic Japanese knife; much of the process is done by hand. It is made from FC61 steel which is very hard (think great edge retention) but also extremely durable (very chip resistant). The curved handle is more like a German knife, especially with the durable 3 rivet design.

Great of example of the Best of the East and West

I gave an Evolution to my cousin and his wife since they were looking to start using 'grown up tools' in their kitchen. The kids were old enough and they just decided it was time. He thanks me every time we see each other, and occasionally I get pictures of something they have cooked.
This is that kind of knife, it inspires love and cooking creativity. It is a hybrid of Japanese and German knife making tradition. The handle is a perfect example. It is a little heavier like a German knife, but a little narrower like a Japanese knife. The steel that the blade is made of is German and the craftsmanship is Japanese. The combination is a hard durable blade that stays sharp for a long time. Hone it regularly and sharpen maybe once a year; you'll have it forever.
Even the shape of this knife is a East and West. The santoku is a much used prep knife is Japanese cooking. It's usual flat blade in this case is replaced with a wide arc that facilitates the rocking motion by Western cooks. Its the best of both worlds. Dishwasher safe, but hand wash to retain the beauty and look of new.

Beautiful twist of German made knives and Japanese crafted knives. It has the rocking motion of the German side with the Japanese style steel. It is sharp and versatile!

I use this knife for everything. The knife is made from FC61 steel and ice Ice-hardened so the blade starts super sharp and stays sharper longer. The blade also has hollow edges so food moves away while you cut. This handle is a Western handle with 3 rivets - super comfortable especially for big prep jobs.

Asian knife for right or left handed people

This is a really cool knife! I can use it like my chef knife because there is a decent curve to the blade but the back half of the blade is fairly flat for easy chopping. It had those lovely little hollow spots that release food easily. The handle on the evolution line is so elegant, can be used for left or right handed people and is very non slip as well. Great deal on a great new style knife!
