Although most cleavers of this general type and level of quality seem almost identical, this particular cleaver has some features that make it stand out from the others. F The molded plastic handle provides a more secure grip through the texture and the more substantial handle size, which is key to the main tasks this knife is intended for. The blade design is very well thought out, with the thickness carried through to the robust yet sharp edge, which remains durable after many rounds of chopping through chicken and meat bones. The weight and balance are well executed, making it easy to direct the substantial heft and power of the blade. While most people would probably think that traditional riveted handle designs are more "premium", in this application the larger molded non slip handle design and larger bolster of the 4 Star line make this the superior choice for a meat clever.
Gets the job done. Cuts through beef, pork and chicken bones effortlessly. Also great to chop tons of onion, celery and carrots for mirepoix. This cleaver is exceptionally strong, and holds an edge for long periods of time, which has not been my experience with my previous cleaver. Made with Zwilling special formula steel, rugged and reliable. This is the last cleaver I will need to purchase.
Perhaps my expectations were off, but I was looking for a heavy cutting implement to make my way through very heavy gourds and bone. The edge seemed dull compared to my Chef's knife (my go to standard). The Chef's actually works better and provided better control.
I am very pleased with this cleaver. Too many cleavers rely on size and weight to force their way through bone and meat. This one relies on quality of material. The forged German blade is sharpened to the perfect angle. The quality of the steel keeps it sharp for a long time and is easy to maintain. The handle is very comfortable and the texture gives me confident in my grip while using it.
