I just got into the sous vide method of cooking. I was told a Staub cast iron pan would be the perfect skillet to use finish off my meats, pork and chicken once they were cooked to satisfaction using the sous vide. The dark interior of the cast iron is excellent for putting a crusted, carmelized finish to a steak, pork chop or piece of chicken. Just a couple minutes on each side in this hot skillet does the trick.
