This top of the line Miyabi knife is a dream in the kitchen. It is made from the highest quality steel, SG2 and produces one of the sharpest blades in the market. The core (the SG2 layer) is surrounded by a 100 extra layers of additional steel for protection. Birchwood handle is comfortable and beautiful. This knife requires a little bit of TLC - no dishwasher or leaving it in water.

A beautiful Santoku

The Birchwood collection is one of my favorites, and I absolutely love using the Santoku. When I handled and cut with this knife for the first time, it was amazing. It cuts so effortlessly with it being constructed with 100 layers of durable SG2 steel. The handle is smooth and feels great to hold as you chop through produce. It’s a great sharp, beautiful Japanese knife.

This in the santoku to have. Beautiful Japanese crafted blade and handle. Sharpness beyond compare with extremely long lasting edge retention. Knife glides through everything placed on the cutting board.

Blade features a Katana edge scalpel-like sharpness, hand-honed using the traditional 3-step Japanese Honbazuke method. The potent core of SG2 micro-carbide powder steel is protected by 100 layers of steel. 5000MCD, Cryodur ice-hardened; 63 Rockwell hardness, flower Damascus pattern provides added durability. Every Miyabi knife does need extra care, it need proper TLC!

Great chopper, dicer and slicer of veggies! The handle on these knives feel so secure and smooth in your hand and look absolutely beautiful over time. The 101 layer Damascus is stunning and gives the knife a nice balance. Super fine edge is very sharp and stays sharp with proper care and occasional sharpening.
