Very sharp. My hand fits an XL glove and this handle feels very good in my hand. I like the 5.5" length and would use my fillet knife if I needed any longer. I love the concave curve at the back that will ring around a bone.

Steak knife

Steak knife are use this boning knife as a steak knife when I ate over my friends house I know that people say oh no I can’t do that you can do whatever you want with any of your knives I prefer a little larger steak knife that’s me, but this works just as good why not buy a whole set and put it in your steak knife slots I prefer a larger knife when I’m cutting or doing my meals it’s just the way I am I’d like the large bread knife I like to large slice a knife and the large chef knife that’s why I did not buy the set that they sell because they’re too short and I have much more control with the large knives so I bought them individually they cost more but who cares this is a set that I’m gonna keep the rest of my life until I die so why not have something that you prefer take a good look at all the knives that they have and you can see the style and the make and even call them,and ask them they won’t do you wrong I am very happy with that particular knife to I hope that they will still produce the 1731 set I think they’re beautiful plus one customer said he’s going to hand it down when he passes away I hope the person that gets that set will understand what they’re getting and I know it’s a limited set so it may not be available any longer getting back to the 5.5 boning knife it was a great knife for my steak also, John.

I've wanted to add a boning knife to my collection for years but instead have been accumulating knives that I can use more often. I received this as a gift and I'm thrilled with it. I have only Zwilling knives and find the quality to be very good.
