This knife is in a class by itself, it has made trimming briskets for our shop an actual dream rather than a chore!

This is my first "professional" knife I've ever purchased and used in my own time. It has been extremely clean cutting through the NY Strips and Sirloins I've been doing at home. Perfect for buying in bulk somewhere and cutting it up and trimming yourself. Knife is also extremely comfortable in either hand which is a huge plus since I'm ambidextrous and switch sometimes.
I would recommend this to a friend!

Used primarily for brisket and rib trims this life is wrap and holds the edge really well. It’s also great to remove silverskin and debone foul.
