Although it tends to overheat in the beginning, the heat does come down to where it should be fairly quickly. If the recipe says to use at 375 degrees, I do 325 degrees at first, then work my way up to 375 degrees.

The skillet is wonderful! It heats evenly and fast. The temp control seems to be accurate. It's big enough to cook a meat and a vegetable at the same time, with or without oil. The best thing is that the first one I got had a faulty control. I contacted Cuisinart and they quickly sent me an entire new skillet and control! I didn't have to send the first one back - they believed me with just a picture of the control cord cut in half with a pair of scissors and the picture sent to them. I didn't have to box up the entire skillet and return it to them, taking weeks. A picture and within a week I had a completely new skillet. That's unheard of in current customer support. Most companies could learn a lot about customer service form Cuisinart.

Works well for long slow cooking but for something like a grilled cheese sandwich, it gets very hot before settling down to the indicated temperature so the first side of the sandwich easily gets overdone while the second side takes much longer than expected.
