first time it was too bit thin but I only cultured the milk for 6hrs. So I tried 8 hrs. my second time and it was still a bit thin. I measured the temperature after both times (at the end)and it was a couple degrees below 110º... maybe that's the problem. I've made my own before now with a slow cooker and it cooked and firmed up better and I had faster results using a little higher temperature and after 6 hrs. but sometimes it came out a little lumpy but that was corrected by stirring it. Will try my third time with a 10 hr. culture period... we'll see.
