Does this need to use a signal to work properly? I work in a Bldg that has zero cell phone signal.
Yes it does need a signal to sync but it will store all of the information and sync as soon as you are done with work

Can you track your activities on a Samsung tablet and how do you do it?
You need to download the app and sync the device, then it will track on any device. Once you down load the app it will give you the steps to sync.

Is it watertight? sweat proof?
yes definitely sweat proof and dirty proof I do all my gardening with this on and all my work outs and it is fine. I have not taken in shower so I cannot answer that portion.

Do I need external exhaust?
Do I have to hook the unit up to an external exhaust vent?
I'm sure technically you should, we did not and all is working fine. This unit has a great cool down option while you are cooking then you can resume cooking.
