As tough or as gentle as you need it to be. Bread dough, cookie dough, whipped potatoes, whipped cream. It's all good and done perfectly. I love the tilt head. This replaced a KitchenAid with a lift head. I could never get the head and paddle out of the way! Well designed, attractive,
