Incredible oven

Upgraded from koda 2 max after delaying the expenditure as long as I could before my pizza exuberance got the better of me. The heating is so much more even. Being able to easily make a 20” pie makes it so much easier for quick family dinner vs being a whole production making 3-4 ~14-15” pizzas that need to be babysat much more bc I tried to get them as big as I could in the koda 16. I usually make sourdough homemade crust and NY style pies. I’ve been doing the 20” ers on a screen (bc I’m scared) and it works great! I use the Ooni recommended blast the oven at preheat then I turn it off for 2min after I launch the pie then I eyeball a bit and adjust temp accordingly then remove the pie and turn back to max before the next one to reheat the stone.
I’ve been doing this so long (I had the very first gen Ooni/Uuni w/ pellets) so I’m a bit disillusioned but I have to think this oven will make it much easier for beginners.
Only nit is every time the left burner doesn’t light easily and takes a few times to get going. Right burner starts immediately first click. . Seems maybe like gas comes out too fast and is oxygen starved but not sure. Once I get it going it never has an issue.

Learning Curve

I really like the quality of the oven. Really just scratching the surface of making top notch Neapolitan pizza. My success is mostly good. I think the trick is once you get the dough perfected is to get the temperature dialed in between the stone and the hood. I’m looking for the right video that talks about that everyone seems to be concentrated on the dough but not controlling the temperature of the oven. It would be nice if you paid more attention to that or am I missing something?
The oven arrived with the wrong gas line hook up, so I had to spend a day doing a deep dive into what fittings I should have by calling my plumber. Once I contact the company. Everyone was quickly responding to my needs and got me the proper gas connection ASAP. I do have difficulties getting the oven to fire up with the starter. I noticed that it’s easier if there’s no wind, my stove can rotate 360° but when there’s wind it hooks around the hood, I’m sure that this is typical but it’s frustrating not being able to light the oven easily.

Poor packaging, decent product

First oven sent had faulty screw holes for one of the legs. Second oven has pizza stones that don't sit evenly inside. Both ovens had an uncomfortable amount of scratches on the top of the metal exterior. First three uses have each required multiple attempts to light one of the two flames which adds time. Much better pizzas than I'd make in a conventional oven, though.

Once up to temperature, cooks

Once up to temperature, cooks more evenly than the Koda 16 that this is replacing. It does get up to over 900F, just takes about 40 minutes to get there. The pizza turned out good.
