Hello John. Thank you for leaving a review. Our griddle tops are 100% rolled steel, and from time to time, they may arrive warped or will warp during the first few cooks. This warp will flatten out as the griddle gets accustomed to heat cycles. Here's a helpful article on our website explaining the process a little more:
