Gas Range with a Learning Curve

The gas range looks amazing and all of the cooktop burners are very strong, but it definitely has a learning curve. The front two burners are too strong even at the lowest setting, but even the back two burners are almost too strong at the lowest setting for simmering and instead boil. Therefore, its really only the middle burner that can truly simmer. Also, the oven is quite difficult to use. It's hard to light and sometimes, the flames die out but it's still putting out gas! This has been a huge concern because last, it got so bad that we could clearly smell the gas from over 20 ft away which is dangerous.
I am having difficulty getting the oven to light, the instructions don't work.

We will guide you step by step on how these issues can be resolved. Regarding the oven flame going out, this model range comes installed with a gas cut off valve so if the flame is not on, all gas stops entering the unit but still please reach out to us regardless. There is a helpful manual that comes with our range that will guide you so that the flame will no longer go out. This manual construction with almost no electronics allows this oven to have a much greater longevity, it can even work during a power outage being be lit with a BBQ lighter. When using the oven, push and turn the oven knob counter-clockwise to the desired temperature (ex: 325 F) and hold until the oven burner ignites. As it ignites, wait 5 to 7 seconds before releasing the knob. Note that the flame will be large for the whole preheating process. Once preheated, the flame will automatically decrease in size, indicating the oven is ready for cooking. Open the door, place the food inside the oven and wait until the flame is visibly larger before closing back the door (this may take a few seconds). Just got my forno stove after a long wait. Installers were very professional and quick. Once I use the oven more, I will have to update my review. Only thing I wish there was more information on cleaning/care of the griddle and steam basket.
After searching for a low tech, high output gas range, I found Forno. Reading reviews I took my chances as I'd never seen one in person. I was able to adjust two burners for lower flame to suit my cooking style and have played with the oven. No problems. Hoping for a long and happy relationship!
