So far so good. Still learning the best way to cook different meats and poultry. I'm going to try the reverse cooking method of some steaks tonight. always checking the Weber website for different cooking recipes.
Cooks great shuts down in middle of cook periodically

This is my first smoker and I am very pleased. While the grille itself take some ongoing maintenance that I am not accustomed to and has taken some getting used to but the end product is great. I have smoked baby back ribs, hamburgers, ham steaks, whole chicken, pork shoulder and spare ribs and they have all come out excellent. Now I am planning on smoking a Turkey for Thanksgiving and I am hoping it comes out as good as the other meats have. All and all, it is a Weber and I am a huge Weber fan.
My first time using was to smoke a turkey as a trial run for smoking another one at Thanksgiving. It looked beautiful but the skin was not crispy at all, and I guess I overcooked it because parts of were drying. The overcooking was my problem because I had one of the thermometers touching a bone so it was not reading correctly. But I do not know how to make the skin crispy. Maybe its just now something that happens when you smoke?

Ash blows all over food. I have done many cooks on smokeFire with fatty meats and there has been no improvement on the fly around ash. I like everything else about the grill. I can’t get passed the ash issue.

We designed Smoke Fire to direct ash (and grease) downward, avoiding food as much as possible.
Wood naturally produces ash while burning, so there is a possibility with any pellet grill that some ash is found inside of and below, the cookbox.
Weber engineers took great measures to uniquely design a pellet grill that directs ash down and into an enclosed system so that very little ash should ever reach the cooking grate area.
You'll notice more than usual the first time your grill is used, and that is okay. We recommend cleaning the burn pot and cookbox push the ash into the ash and grease drawer with the provided Weber scraper. See your owner's manual for more details.
Please keep in mind the grill is designed for Weber all natural pellets for optimal performance.
