This pan is so much more than a braiser. It has quickly become my every day pan. I use it to saute, fry, roast, and it is also great for making pancakes in the morning. The dark interior is great for browning, and searing and is resistant to discoloration and staining. The glass lid makes it easy to monitor foods while keeping all the juices inside. Looks great on the table, and keeps foods at just the right temperature.

Lightweight but sturdy. Heats quickly and holds heat well. Used for baking (Dutch Baby) and stove stop (fried potatoes, burgers, eggs -so far) and is equally fabulous for both.

Best Braiser.

The tight fitting glass lid is the feature that I was looking for in a braiser. Most of my cast iron pots have a lid made of the same material. This makes it easy to view on the stove top as well as the oven. The high glass dome gives you that extra space for roasting and braising chicken or larger cuts of meats. Love this pan. Great addition to my cast iron collection.

I love the flat bottom!

[This review was collected as part of a promotion.] My first dish was a Scallops and Linguini in a lemon cream sauce. Scallops seared beautifully in this pan. Removed and created the sauce. Then when the pasta was done, threw into this pan and mixed all together. Super easy. Lots of room to manipulate the food, didn’t overcrowd the scallops. Love this pan!
