I know this sounds obvious

I know this sounds obvious but having the right tool makes it easier to fold the dough and then to get the dough balls out of the dough box. I tried to use the stanaard kitchen tools but they just never worked right. But this you'll thank me later.

Very useful kitchen tool while preparing dough, especially higher hydration doughs. Also useful when portioning dough from bulk to balls. On that note I would highly recommend their scale to measure your ingredients and your dough balls.

I like that the edge is sharp. It makes it easier for cutting dough or scraping dough up off the rolling out board.
