This beautiful asian style cutlery pulls some of the most loved features of western cutlery. The ambidextrous handle, the clean blade with a touch more give than an eastern style and the profiles that we are all used to. All in all, a great set of knives, that blend the best of both worlds.

Great place to start

Excellent choice when you want to upgrade to better knives. I gave an Evolution to my cousin and his wife since they were looking to start using 'grown up tools' in their kitchen. The kids were old enough and they just decided it was time. He thanks me every time we see each other, and occasionally I get pictures of something they have cooked.
This is that kind of knife, it inspires love and cooking creativity. It is a hybrid of Japanese and German knife making tradition. The handle is a perfect example. It is a little heavier like a German knife, but a little narrower like a Japanese knife. The steel that the blade is made of is German and the craftsmanship is Japanese. The combination is a hard durable blade that stays sharp for a long time. Hone it regularly and sharpen maybe once a year; you'll have it forever.
This set has all the knives you will need to prepare and epic meal. And as your cooking evolves, there specialty knives that can be added to this block to round out the collection. Dishwasher safe, but hand wash to retain the beauty and look of new.

Forged in Japan, you can feel the sharpness on your first kitchen cut... Great assortment in block, you'll love the not too big-not too small santoku. Slightly curved, riveted handle will have you working for hours in comfort.

great entry to Japanese cutlery

I have been looking at trying Japanese cutlery for a while but was wary of the price and design. This set is great. I get a Western style handle with a Japanese blade. The steel is very sharp and has gone through the traditional Hombazuke three stone sharpening process. The watermarking on the blade shows the true craftsmanship and tradition harkening back to the making of Katana blades. The set is a good starter and I like that there are open slots for me to add more pieces to over time.
