Love the pans, hate the lids!

I have had this cookware set a couple of months now and have been very pleased so far. I love the high end look and feel of the pans, they look great hanging from my pot rack. I purchased these because I have a smooth top range and the thicker bottoms appealed to me as well the induction compatibility, as I would like to purchase an induction range in the future. My last set of Calphalon pans over time would warp because the bottoms weren't very thick. The larger the pan the more it warped. These pans have a thicker bottom and work great on my smooth top range. The heat transfer is better and I am getting the cooking results I wanted (on a smooth top range the pan has to make contact with the glass to transfer the heat properly). I even purchased a few additional pieces to get the sizes I wanted. I love being able to put them in the oven as well! I really wanted a set with metal lids. Most cookware sets seem to have the glass lids. With the glass lids the lid handles get hot very quickly. I have solved the problem by having a pot holder handy. My last set of pans had metal lids and the handles never got hot. Overall I love the pans and plan on using them for a long time. If they had metal lids, they would be perfect!

Great Set!

Purchased this set after getting a new induction cooktop. I have owned this set for over a year now and have had no issues whatsoever with food sticking. I can scramble eggs and they literally slide out of the pan. Please make sure you are using them properly and you will have no trouble! You must warm the pan on medium low heat before adding your oil or butter, then let that warm up before putting your food in. You should not be cooking at high heat on an induction unless you are boiling liquids. I gave 4 stars because the handles could have been a little more comfortable to hold. I hope this helps those that have been having issues with sticking :)

Stainless or Anodized - Requires Technique

I have both Calphalon Anodized and Stainless cookware. Both are excellent well built, well designed cookware. But, they are not nonstick. And using cookware non-nonstick requires understanding a couple cooking techniques. First, oil is required. Second, heat is required. Third, deglazing the pan with water, wine or sauce is necessary - and a good thing - because that 'fond' on the bottom of the pan is all flavor and color for the finished dish. Last night I pan seared chicken breasts, then deglazed the pan with some puttanesca sauce, replaced the chicken, covered it with grated parmesan put it under the broiler for 2m for a nearly instant chicken parmesan. Cleanup was simple because the tomato sauce had lifted the sticky bits and incorporated them, and their flavor, into the sauce. And, a little Bon Ami or Bartenders Friend will remove any thing remaining. Exception: Scrambled Eggs. For that, use a non-stick pan.

Best set of cookware I've used

I received this set of cookware as a gift from my Mother this past Christmas. It replaced a prior Rachael Ray non stick set that I had. I am an avid cook and use my set daily and can say that I love how it cooks and operates. I have used this set to cook eggs, pancakes, meats, veggies, you name it. And, I have had ZERO issues with sticking or staining. But, I did a lot of research and made sure I knew exactly how to handle stainless steel which seems to probably be some of the issues for those that gave this set negative reviews. You can not use aerosol cans with this set. You need to buy an oil sprayer/mister and you can find them in store or online anywhere. You need to get Bar Keeper's Friend cleaner or an equivalent. If you wash the set, whether by hand or dishwasher, and still see stains or some spots just use that and it will take it right up. I use the dishwasher and my pans still shine like I took them out of the box. Do not try and wash the pans immediately after cooking. You must allow them to cool a bit or else that can damage them as well. Watch the temps you cook at, as this set does not require that you use as high heat that often non stick pans or other sets do. Overall, if you learn how to use and properly care for this set, you'll be pleased with your purchase and see that this is a superior set of cookware for the money.

After 5 months, still love these....

I have owned these 5-6 months and waited to write a review. I love these. I read a lot about different stainless steel pots and pans before buying these - though I have been a fan of Calphalon for year. I wanted the tri layered pans to ensure the whole pan was heated uniformly (ie the bottom AND sides of the pan). I think some of the recent reviews w 2 stars are from folks who don't know how to cook with stainless steel pans yet. There are some YouTube videos out there - but you need to heat the pans thoroughly, test by dropping water that turn to beads and then you know the pan is fully heated. Add oil to coat and then cook away. I can clean w Bar Keepers. I LOVE these pans and would buy then again in a heart beat.

Outstanding Cookware

We have had this cookware set for about 8 years and they perform outstanding! Except for some slight scratching from use and abuse, they are in great shape. You must change your cooking habits and USE MEDIUM HEAT! These pans conduct heat very well and heat up fast and hot on only medium heat. If you insist on using a higher temperature setting you are just going to frustrate yourself and burn everything. If you keep your burner setting at medium or below and use light oil, your food will cook wonderfully and won't stick to the pans. If you do burn your food and dish soap and a soft scrub sponge won't remove the residue, buy yourself some Bar Keeper's Friend scouring powder and you will be able to bring back the shine to your pans. I recommend washing again with dish soap after using Bar Keeper's Friend to remove any left over residue and odor from the scouring powder. I have found these pans to be practically indestructible and great to cook in over MEDIUM HEAT or lower.

BEST EVER

I begged for these for Christmas and I'm sooo glad I did. I love to cook like the pros and this really helps to get the proper sear on meats etc. It's nice to be able to sear and then finish in the oven. This is the 1st stainless steel pan that we can actually fry an egg and it slides out. They're easy to clean and they look great on my hanging pot rack. We love them so much, I'm getting my nephew (a chef) a set for his wedding in October. If you like to cook, these are the pans for you!

A great set of cook ware

I have been using this set of cook ware for about a year now. The food are cooked evenly and the natural flavors are maintained if I use the correct temperature. They are easy to clean. The design is elegant and the pots and pans are sturdy. The only thing I wish they had is a draining sprout for the saucepans, so that I can pour boiling water out of them with ease.
