Questions on how to use

I have a few questions on the usage of the sifter, when the sifter is on the paddle is moving in the bowl. So when sifting flour into a batter you are mixing the entire time the flour is being sifted into the bowl. Which may be too much mixing. In many recipes when adding the flour to the wet ingredients you are directed to not 'over' mix. But if I'm mixing while sifting then I'm at risk of 'over mixing" How do I not over mix, do I take the paddle off the when I'm sifting? ( that seems like a process). Second question is does this sifter work for brown sugar?

Great machine

[This review was collected as part of a promotion.] This machine has been a game changer for me! One machine with KitchenAid attachments and your one machine and done! Would definitely recommend to any of my friends! I just can’t download videos for whatever reason!

Nice design but no instructions

No instructions in the box. It is not clear what things are machine washable, how exactly to disassemble and reassemble the parts, or intended uses and included features. Usually at least when a product has you go to a website for more information it is at least there but not only is none of this information included in the box but it does not exist digitally either. Very irritating to have to hunt for a manual for a premium product you purchased.
Apart from this issue the parts are quality and the ability to disassemble and wash them is very handy. Just wish I didn't have to figure it out for myself!
