Whole wheat flour & ground flax seeds

I bought a Vitamiz 3500 along with the 48 oz Dry Grains Container and have been using it for about 2 weeks. I have found that grinding flax seeds, for better digestibility, only requires using a speed of 1 or 2 to quickly grind up the seeds. Flour from wheat berries, in contrast, requires much higher speeds. I am starting to experiment with mixing them together prior to blending, which seems to work ok too, making a flour / flax blend.
I really enjoy the flavor with the fresh ground flour and I believe the nutritional quality from freshly-ground (i.e. unoxidized) whole wheat is substantially greater. I have made pancakes and waffles so far, but still mix my batters by hand by preference since it has been my lifelong habit for those batters. The consistency of the flour (and batter) is better than I get from my flour mill partially because I have more control with the speed settings on the Vitamix.
So far, I really am impressed with how well my Vitamix works.
Pros: Texture Quality, Easy to use, Versatility, Power
This jar works only with certain quantities. If the quantity is less, it does not grind but will just spin.☹️
Pros: Versatility, Product features, Power

I purchased the Grains Container to make my own spices and powders. Absolutely love it. I’ll never buy store bought spices again as the quality level is not even close to comparable.

The 48-ounce Dry Grains Container is a very useful addition that greatly enhances my experience with using Vitamix for cooking fresh whole food. One of the very practical future if it is that it grinds even small amount of grains/coffee/nuts/herbs/beans/lentils etc. So far, I used it extensively for grinding dehydrated organic herbs from my garden and making chickpeas and lentils flour in small batches for immediate use in the kitchen. Works great!

I love my Vitamix and use it almost daily. I purchased the dry grains container so I didn't have to hear my husband grind his coffee beans in his little grinder every morning. Now he can grind more at once and it only takes seconds!
This makes gluten-free doughs and batters much more affordable and easy. I have made and used oat flour and rice flour for sweet and savory dishes. I can mill just what I need, but these keep well in the fridge too.
