Excellent sautee pan

This is everything you could ever want in a sautee pan. It cooks evenly, doesn’t need high heat, and lets your recipes shine. Even though it's not a non-stick pan, it cleans easily enough. I haven't had an issue with foods sticking, mainly because I know how to grease the pan with oil or butter -- and keep gently scraping the bottom as I cook. The only negative about this product is the cover, which is a very thin stainless steel. Cuisinart should have made a glass cover, but obviously didn’t. Oh, well. So, the pan gets a 9.5 out of 10 from me, while the cover gets a 6 out of 10. And I'm not the Russian judge.

A good pan for a reasonable price

Most of the time I cook just for myself, so I was looking for a relatively small "tri-ply" braiser at a reasonable price -- and this pan from Cuisinart fit the bill. It seems sturdy but not too heavy. I like that the included lid is flat rather than domed, which means the covered pan takes up less space and is easier to store. The stainless steel exterior is easy to clean with a little Bar Keepers Friend, and if you heat the pan before adding cooking oil food won't stick. Finally, the straight sides are a good height -- not so low that food slops out when being stirred and not so high as to make reaching in with utensils awkward. All in all, a good pan.
