Unless you like sharpening your knives by hand, and know the correct angles for Japanese knives and American/German knives. This isn’t for you! But it is for ME! Love how sharp they get with this sharpener. I have tried several. This one is worth every dime and Pennies I spent. Without going to a professional shop.
I would recommend this to a friend!

I have new knives and knives I've had for 25 years. All Wusthof or Zwilling/Henkels. Much to my surprise, my knives are 15 degree knives - all of them. I assumed, like most that German knives were a standard 20 degrees. But I checked on my models of knives with both manufacturers. So while I originally bought the 1520 to do both 15 and 20 degree knives, I only needed the 15 (middle) and stage 3 for all my knives. I followed the directions. It relatively easy (I've used chef's choice electrics before). Every knife was tested and can cut paper, and even thicker magazine pages without a hitch. They are all magnificent. What a great sharpener. I had so much fun I asked my neighbors if I could sharpen theirs!!

Sharp Knives

[This review was collected as part of a promotion.] This knife sharpener is amazing. It has helped to revive some of my dullest knives. Many of my knives are old and have become very dull over the years. I've tried a sharpening steel before but it would not adequately sharpen my knives and they would become more dull than before. I love that this knife sharpener is electric and motorized. It does a fantastic job at sharpening my old knives. It is important to read the manual to get the machine properly set up. The manual is helpful and easy to follow.

My brother bought this sharpener for me as a surprise gift. We had been talking about the same one he has. It did a fine job of the much needed sharpening on all my knives, even the serrated ones.

Was always afraid of an electric knife sharpener…

I have always had fairly sharp knives, but not really sharp knives. I’ve tried a lot of different sharpeners and I’ve had mixed results and have always been very leery of electric ones since I’ve heard all the horror stories about people grinding their knives away to nothing.
However, after reading the way that cooks illustrated in America’s test kitchen raved about the chef’s choice. I decided to give a 1520 a try.
The learning curve exists, but it is not steep. The results are absolutely amazing! No question that I have waited too long to buy one of these and will recommend it to everyone. I know that needs sharper knives!

I have had the 1520 model now for over 5 years now. I purchased when I was a student in Culinary School. My knives are like scalpels. I can breakdown primary cuts of meats with very little effort. I do not understand why anyone would give this unit a bad review. I highly recommend.
