I love cooking salmon and steelhead on the pellet grill, and Bear Mountain alder is reliably good for that. For some reason, alder is harder to find than other types of wood, but it is ideal for fish and great for poultry. It's also mild enough for grilled pizza.
I like to set the pellet grill to 250 and get a heavy smoke rolling over the fish. The alder smoke flavor comes through without bitterness that you would get with oak or hickory. I've also smoked steelhead with a sweet nut rub for 8 hours at 180 (with spritzing) using these pellets to produce a kind of fish 'candy' that is irresistible.
Technical note: I don't get as much sawdust at the bottom of the bag from Bear Mountain as other brands. This may only have to do with how the bags are handled after they are shipped. Who knows.
If you and your family love fresh fish from the Pacific Northwest, give it the gourmet smoke treatment it deserves.
The ONLY pellets I'll ever use! I've tried several brands, but I keep coming back to Bear Mountain. The Alder pellets are REALLY good for cold smoking cheese, as it adds a light smoke flavor, and isn't overwhelming.
Bear Mountain is hands down the best. I like Alder due to is mellow smoke flavor, it goes with fish, pork, chicken, and can be used for beef. Though oak or mesquite is preferred for beef. One downside is Alder pellets are difficult to find. Even on Bear Mountains website it’s still a challenge.
My family really likes this one because it has a very mild smoke flavor to it so if you're just grilling chicken with non-bbq flavors it's a nice option.
