Cooking performance is very good...5 stars. But I'm finding that I need to use Barkeepers Friend after every use. Wasn't expecting that. I'm following the guidelines.. .heating pan, adding oil, heating oil, then frying food. (never higher than 6 out of 10 on electric stove).
We have loved using our all clad set every day since getting it. We are however learning to use it properly without sticking and hard clean up. It seems to be possible but a learning curve from ceramic/Teflon/etc.
I recently bought this set since I am building a house that is going to have an induction stove. The set outs very nice and o can’t help but believe that it will last a life time. I see some are disappointed that they don’t seem to maintain their brilliant luster after use, to that I say I plan to use them not show them off. I just hope I can learn to cook well enough to brag on what I used to cook with. No one needs to see them except me...
I e had this pan for 20 years and while I don’t use it often (it’s huge!) when I do, it’s indispensable. It’s great for searing large roasts! The only downside is even though it’s far sturdier than anything else in this size, it does warp over time. It’s still ok on a gas cooktop but it’s insufferably too warped for use on a smooth cooktop. Also for some reason the handles on the new D3 have less rounded edges that dig into your hand more than the original 3-ply pans. I’m glad mine is from the 90’s but too bad the handles aren’t more ergonomic.
