Cooking performance is very good...5 stars. But I'm finding that I need to use Barkeepers Friend after every use. Wasn't expecting that. I'm following the guidelines.. .heating pan, adding oil, heating oil, then frying food. (never higher than 6 out of 10 on electric stove).
I e had this pan for 20 years and while I don’t use it often (it’s huge!) when I do, it’s indispensable. It’s great for searing large roasts! The only downside is even though it’s far sturdier than anything else in this size, it does warp over time. It’s still ok on a gas cooktop but it’s insufferably too warped for use on a smooth cooktop. Also for some reason the handles on the new D3 have less rounded edges that dig into your hand more than the original 3-ply pans. I’m glad mine is from the 90’s but too bad the handles aren’t more ergonomic.
