I have purchased several Rada knives in Amish country. I like my cheese knife not only for slicing cheese but also for cutting hard boiled eggs. Recently I used it to chop candied fruit for fruit cake. The sticky fruit did not stick to the blade. Great knife!
I found this cheese knife at a local thrift store. Why anyone would ever donate such a fantastic item is beyond me, but it was my lucky day when I found it. I knew it was a Rada when I bought it, but I didn't know it was the cheese knife until well after I had been cutting everything else with it. Seriously, this thing is awesome for cutting anything from thin slices of tomato to juicy ribeye steaks, it just glides right through everything. My favorite thrift store find to date!
I like the way it doesn't stick to the cheese and the weight and quality are excellent. I have many RADA knives but this one is not my favorite. It might be my technique or something wrong with the knife, but I can't seem to be able to slice an even piece of cheese with this knife, especially sharp cheddar. It starts out the width I want at the top but will not cut straight down as it bends after going halfway through and I end up with either a piece thicker at the bottom or thinner. I have had it for a few years and it has never cut a straight piece. OK for just me, but when I am having company, I use another type of knife to get straight even slices for my charcouterie board. I just put up with the cheese sticking to another knife but the slices are even. Unfortunately, I cannot recommend this knife, though I love all the other knives I have used and purchased since my mom purchased her first set in the 60's.
I bought my Rada Cheese Knife several years ago because it reminded me of a Klingon Bat'leth and if you have the option of cutting your cheese with a warrior's weapon, why would you use anything else? And it's made in the USA! We use it often and always emerge victorious! Highly recommend this Cheese Knife.
