The Carver / Boner is designed to have some flexibility for cutting close to bones. It is similar size to the Slicer but that blade is more rigid.

I have used this carver on roast turkey and beef roast. The blade is flexible on poultry and sharp through beef. The narrower blade of the RADA carver is sharper than my old carver. Nice to have a new knife for the added sharpness.
