This is by far the sharpest knife I've ever owned. It makes cutting small and soft things like meat, tomatoes, garlic, even capers so much easier than any of my other kitchen knives. The quality and looks are also wonderful, but after a few months of use, I'm still very amazed every time I work in the kitchen with this and my other new Shun kitchen knives.
I know nothing about knives. I am 78 years old and have had my thumb joints replaced twice. I went to the cutlery store app my mall and asked to feel their kitchen knives. several brands were laid out in front of me on the counter, and I kept going back to the Shun knives. I needed a handle that I could feel- that my hand would honor- and that I would not drop. (My worst drop was a smooth handled German Chef knife that landed across the instep of my left foot.) I bought one each of all the knives they had, four to be exact and the rod thingy. They are Dual Core!!! my hands love the octagonal shaped handles. I can feel my grip and I feel safe with him very safe. I’ve had them a couple years now and I’ve never dropped one. Love them!
I'm a traveling catering chef doing off premise outdoor fine dining for high end events. My knives need to both perform and look exceptional well. Having had this knife for 2 years now, I can honestly say it is the best petty knife I've ever owned. Amazingly sharp, has excellent edge retention, and the looks are out of this world. I get compliments from fellow chefs, guests, and photographers, everywhere I go.
