Happiness in a Blade

Just got back from a trip to Tokyo, and picked this up. I could have ordered it online, but there's something nice about going into a store, seeing the display, and discussing what suits your needs. Like the very best of Japan, this knife is design and function in one: it's beautiful, it's light, it's well balanced, and it's scary sharp. Worth every penny.
It took a while for me to save up for a Shun. I'm your average prep/line cook living pay check to pay check and was a little hesitant to step up and invest in this price range. I don't regret buying this knife for a second. It's the most comfortable, well-balanced knife I've ever had the privilege of using. The added precision is something you'll simply have to experience for yourself. If you're on the fence about whether or not this knife is worth the investment, get off the fence. It's worth it.
Such a great knife that I bought the whole set of premier knives and I use everyone... even the bread knife cuts better then most high end chefs knives... love the rugged old school hammered look.
The Premier 8" Chef is my third Shun purchase for the kitchen, the other two being the Classic 7" Santoku and 4" Angled Pare. My experience with those two knives for several years pushed me to Shun once again when I needed a new chef style knife. These sintered steel alloys hold an edge better than any production cutlery I have heretofore owned. Once your edge is completely finished, steeling will keep them hair popping for months at a time. One caution; these thin hard blades will not take abuse. All designs have some compromise built in, and if you want to avoid chilli.g your blades treat them with respect.
I have several different brands of knives, and Shun is by far my favorite. The knife is so comfortable and keeps its edge. I've been selling cookware and working in kitchens for over 8 years.
The knife is truley amazing. Very sharp and stays sharp for long time. lightweight to reduce fatigue in long prep tasks. Been cooking for 20+ years and best kinfe I have owned.
