To be honest, I am not that pleased with the purchase. My wife bought a cheap Cuisinart chef knife and it is much sharper than the Shun. This is true of my Shun 10 inch chef's knife that I sent in for expert sharpening by Shun.

Great middle sized knife. Super sharp, as usual. Ideal for filleting fresh caught fish and making precision cuts.

My son bought several Shun Kanso knives. I had mostly German and French knives along with a set of expensive Damascus steel type Japanese knives. I like his so much that I bought two, this one and a paring knife. I love them. They are gorgeous, easy to use, well balanced and light. They are also super easy to clean and not prone to scratches. Not cheap, but quality is worth it.
