I've used many different knives over the years. This one is, by far, my favorite. My wife jokes that I take better care of it than anything else in the house. I'd like to argue, but I can't. It makes my work so much easier. I highly recommend it to anyone looking.
My go-to knife, perfectly balanced, light for a 10"" but strong and sharp, keeps it's edge. And it's gorgeous too! Effortless to use, like an extension of my hand. All at a very reasonable price for what you get. Buy One!
This wasn't my first Shun but this is the one that made me finally put my Henkel's away after 30 years as a loyal user. Great balance, light weight, razor sharp edge that is easy to maintain. Of the four 10" Chefs knives I have this is by far my favorite.
First of all, this is a work of art in all respects. From a culinary, technological, metallurgical, ergonomic, and artistic viewpoint in every respect, this knife may be the finest all-around cooking knife available. Mine came to me as a gift from my wife, and I put the initial edge on it in a matter of 5 minutes. You simply guide this knife into any food you are preparing, and the blade does all the work. The handle fits into your hand very comfortably, not too thick or too thin - just right! It doesn't matter where along the blade that you choose as the point of work, the cuts are effortless and controlled. The hammered finish of the thickest portion of the blade prevents food from vacuum locking to the knife. The edge holds very sharp through many uses, negating the need for the chef's urge to over sharpen the blade. This in turn will make the knife last years longer than a typical chef's knife. Incorporating the equivalent ancient methods for samurai sword making into the knife has made the quality of the blade extremely high and durable. The lines of this knife are elegant, clean, classic, and yet very personal. You take it into your hand and feel an immediate comfort and familiarity. This is because of the design - it's heft and balance are perfect. The cross-section of the handle keeps the blade oriented perfectly to the work, and since the blade cuts so easily, the amount of pressure necessary to grip the knife is very low when compared to knives of lesser design or quality. This translates to less effort and stress to the user, reducing the user's fatigue and increasing the enjoyment of using the knife. Cooking should be a pleasant experience, and the quality of this knife adds to that feeling. This knife should last for generations if appropriate care is given - and that is as it should be. Buy this knife and it will become a personal treasure.
I really appreciate this tool. It's truly a work of art. A word to the wise: treat this blade with respect and work up to your normal cutting pace — it will bite you. Metaphorically speaking, of course. Compared to my Wustof Grand Prix, it's like going from dial-up to broadband. I cherished my Wustof for 15 years and I feel that this Shun will serve me well throughout the next decade. In all sincerity — YOU BUY NOW!
