Of course it very sharp. But this one is balanced well. It is stable and easy to control the knife edge. I love to shred cabbage, cucumbers and other vegetables into fine strings for salad and decoration.
I now have 6 Shun knives, for different uses. But I have to admit, I LOVE the Kiritsuke and prefer it over my traditional chefs knife. Plus, the premier handle is a better fit in my hand.
The purchase was a great choice. In addition to the 8” Kiritsuke, I also own the both the Shun Primer 8” Chef's and the 7” Santoku Knives. They are all great knives, offering different belly designs. In that I found that I prefer the straighter knife edge on the Kiritsuke Knife. You can’t go wrong with any one of these knives. It’s Kiritsuke that is my preference. for slicing and push cuts.
I rec'd one as a gift and I find myself using it over a french knife or nakiri. Its a little heavy to be using all day but as a home knife thats a non-issue. (I honestly love the weight)
I have just added this beautifully made Kiritsuke to my set. If you have a larger hand. The Premier sets are wonderful for someone with a larger hand. This knife is well made, just as sharp as it looks. It has been a great offset to using my chef’s knife. So I don’t have to use the same Knife twice as much and I think it is a great addition to my growing collection. Thank y’all for the great craftsmanship!
I have an 8" chef classic Shun knife I purchased a while back. I thought my Classic was sharp. This knife is sharper by far. I also feel the Kiritsuke is easier to handle than my chef--my new fav
Shun knives are among the best! I bought this knife for my son who has quite a few Shun knives. He carries them wherever he goes if he thinks he'll be preparing a meal. He is a very very good amateur chef and takes pride in the tools he uses to prepare the meals. All the best, Richard
