We have had high-grade German knives for years and were very pleased with them. A friend recommended the Shun line and gave us one. That's all it took. After using the original knife, we were hooked and are now in the process of changing out the remainder.
I have had this knife for over ten years now, more than 5 of which I was cooking professionally. It has been all that time my favorite item in the kitchen. good for most anything that doesn't require a heavy knife for cleaving. It has been with me for all of my culinary learning and I rely on having it in my kitchen.
I originally bought a Santoku Classic a few years ago. Then I added to it a Nakiri, Ultimate Utility, and Paring with honing steel. I then got married and my wife said the knives were too big for her except the paring. I secretly got her this as a surprise, but I was surprised too at how great of a knife it is. We are plant based so we have no need for anything meat wise and I don't like ""Western"" style knives because I'm so used to the Shun locomotive cut.
I love all the knives, but this one and the ultimate utility surprised me the most.
