best fine knife

I do French Asian fusion cuisine involving very fine hand cut portions of various foods. From fish served raw in precisely cut shapes to fine dice fruit and oil sauces made to order. This knife is what I use for all my finer work.

Fantastic knife to clean meat

This knife is beautiful... I use it mostly to clean meat. The blade is not super flexible but I like it very much for what I use it for.
