KitchenAid Mixers Are Not Meant to Knead Doughs
on February 13, 2024
Posted by: jayterrie
This is the second 5-quart KitchenAid tilt-head stand mixer I have ordered in 18 months. The first broke after 3 months when the tilt head would not remain in the locked position which caused the beater and head to bounce while it mixed. The company sent me a brand new replacement because it was within the warranty period. A few months later when making bread with my replacement and the dough hook, the motor got very hot and began to smoke even though the dough was soft and elastic, not stiff or dense.
I called the service department to report the issue. I thought it might be best if I spent more money on a more powerful model---perhaps the bowl-lift, 7 quart professional model. I offered to pay for the upgrade but was told that was not allowed. They would, as a one-time courtesy, replace my mixer with exactly the same model free of charge.
However more importantly, the service rep told me that KItchenAid stand mixers are NOT MADE TO KNEAD DOUGH AFTER A DOUGH BALL FORMS. The user is supposed to STOP THE MIXER, REMOVE THE DOUGH BALL AND KNEAD BY HAND. What is the purpose of the dough hook then? Every recipe I make requires a lengthy knead after the dough is formed. Virtually all professional cooks recommend that home cooks use KitchenAid mixers because they take over the onerous task of kneading.
I had my very first artisan tilt-head KitchenAid stand mixer for more than 37 years before it quit. It kneaded countless loaves of bread and yeast doughs for as long as the recipes required. This KitchenAid was purchased in 1986 when the Hobart Company manufactured the products. After 1989, Whirlpool bought out Hobart and all of the KitchenAid appliances are now made by Whirlpool. I wish I had tried to repair my original KitchenAid stand mixer instead of replacing it. Obviously the quality has gone down. If you only want a stand mixer to make loose cake batters or to whip cream the newer KitchenAids are fine. However if you enjoy making bread, rolls, and yeast based desserts, even the company's representatives will warn you not to use their KitchenAid stand mixer.

Shipping and communication

[This review was collected as part of a promotion.] Haven't used the mixer yet as it is a CHRISTMAS gift. Yes, I said CHRISTMAS. The shipping process and communication sucks. SUCKS. I will never again order anything from the kitchen aid website. The only reason I rated one star is because I didn't see a zero.

[This review was collected as part of a promotion.] Found an awesome bakers rack with power cord built in w/adjustable feet for movement while kneading. I have made bread, cookies and tortillas. Bought pasta roller and spiraling so experimenting with pasta and veggies as well.

[This review was collected as part of a promotion.] The first one I received in the mail wouldn’t stay in the “off” position and the replacement doesn’t lock so I cannot make cookie dough. What’s the point of a mixer if it can’t do the heavy lifting parts for you? Very disappointed. To get a replacement you have to call and do it over the phone - no emailing - which is very inconvenient for those whose schedules do not align with KitchenAid’s.

[This review was collected as part of a promotion.] I searched and researched stand mixers for a month. I gave my 30-year-old Oster stand mixer to my daughter-in-law, and now I had to find one my husband was willing to pay for my birthday.
After weeks of looking, I decided on Artisan with the premium package, because I wanted a smaller bowl as well.
The first thing I baked was white chocolate macadamia nut cookies. Yes, even with the guard the flour flew, so I will work on resolving that. I didn’t mind, because it all turns out beautifully. I even used the dough hook to make subway rolls… perfect!!

[This review was collected as part of a promotion.] We enjoy using this mixer. Note to self is to read instructions. The first time I put bananas in the bowl set to go and I had bananas flying. Of course there is a locking mechanism. Works wonderfully on everything.
