A unique design; however, the edge retention is very poor, which leaves me somewhat dissatisfied. I have owned other knives from the same brand that worked wonderfully for me; yet, this particular model went dull in less than half a day—and that was without making any heavy cuts.
Great knife i am retired and been a professional chef for 20 years and o discovered Shun about a decade ago. I have been a big promoter of your company more like a silent ambassador. Outstanding knives.
Great knife for all around use. I do prefer the santoku knife a little more, but this knife does everything the other knife does. Can’t wait to add to Kanso collection!
The knife is well balanced and the curve is just right for the type of cutting I do each day. I do not use it to cut through large items such as a head of cabbage or block of cheese. It’s better suited to smaller cuts. The only downside is it’s ability to maintain its edge. I’m a professional chef and use the knife as my go-to. I have to hone it more frequently than I would like. Still a great knife!
i bought this knife a couple years ago. i fell in love with the look at first, and had an idea of the type of blade i wanted for my main chef knife. the slightly curved blade shape is perfect for me, as someone who does mainly push-cuts and chopping but also needs to be able to rock through herbs often. the steel lasts quiet well, given the abuse i put it through at work. at first i treated it like my baby but have grown comfortable using it as a workhorse. what has really made me love this knife more than any ive used is it's feel. it's light weight and balanced great for a pinch grip. the slight bevel and curve of the handle are subtle but impactful; and i really love the broad curve of the heel of the knife, which is something im going to specifically look for in future knife purchases. i've twice now had a co worker handle the knife for a moment, and right away say they love how it feels to hold. i might just get the santoku version as well.
I'm a full time sushi chef, and the Kanso 8" chef's blade has replaced 3 other knives. I probably use this knife 20 hours a week (in my hand cutting) and I love it. Will be buying the rest of the Kanso series for sure.
