Compresses Panini sandwiches much better than a waffle griddle, but still need to "fiddle" with sandwich when closing as the top lid has a small arc when compressing the sandwich. Variable temperature dials are great for adjusting temperature to match desired cook speed.

I think this is my 4th Griddler, 3 purchased and 1 replaced under warranty. They have been the main appliance in my kitchen and are heavily used. I cook everything from grilled cheese to chicken or steak. The only design flaw is that any grease or butter that's on the top part, like when cooking a burger, will drip off the top grill plate when to raise the top. After a few years I usually order a new set of grill plates because I use them so much the coating on the ribbed side wears out. When that set wears out I usually replace the whole thing and start over.

I am disappointed that the top does not lie flat as advertised. It is impossible to cook eggs or pancakes as they will slide to the side. The regular grill function works extremely well.

This is my second Griddler. I loved the first one, used it often and was heartbroken when it quit while making pancakes. So glad I found a new one and really love that the new plates are reversible instead of having to keep track of 2 different sets of plates.
