I have a set of both Shun & Miyabi knives, which I previously sharpened with both Diamond and Wet Stones. This Japanese pull thru ceramic sharpener worked so much more easily and better. Previously have been disapointed with such devices when used for western 25° knives.
Junk. Not meant for a MIYABI knife. Cuts at the wrong angle. I am honestly surprised that they put their name on this. Not a Wet Stone expert so I have only two options to keep my knife’s sharp 1) Send them out to a professional or 2) last resort step up to a very expensive angle guided stone set up to keep the correct edge from factory. This sharpener will be retuned
I’ve yet to require sharpening for my newer Miyabi knives, but I did use the two stage sharpener on an older Chef’s knife, and it made a noticeable improvement in its sharpness. I suspect my old Chefs knife is of the Western angle, rather than the European more narrow angle, but, from now on, it’s probably going to be European.
If this two stage knife sharpener maintains the same sharp angle of my new Miyabi kitchen knives, I’ll be very happy. So far all the knives pass the paper test, as I hone them after each use and have even stripped some of them with a heavy leather belt, leaving them razor sharp.
