One of these is a must to keep the edge and angle of your knives in tip top shape. Each time you use your knives the fine edge bends and goes out of alignment ever so slightly. In between uses just hone your blade with a sharpening steel and you won't believe the difference! This keeps your knife performing its best between annual sharpening.

This is what keeps your blades in shape. I like that I can use the width of the handle as an angle guideline for the knives to be honed. Easy to use too.

I love this sharpening steel! It is a great price and easy to usel There are plenty of online tools if you are not comfortable with a honing steel!

This good basic honing steel is the second most important cutting tool in your kitchen. Good knives need to be maintained. Regular honing and sharpening makes cutting easier and safer, and extends the life the knife. Hone every time you pull your knife out and you will be pleased with the results.

How hard is this steel?

I notice every review gives a mini tutorial of how to use the steel. I know how to use it but it's not clear what knives it can and can't handle. I'm assuming it can't handle a myabi knife but what about the Santoku in the 125 dollar range? What's the cut off in the Hinckle collection?

I use this in concert with my sharpening routine to align my blade edge. It is easy to use, lightweight and has a comfortable handle that feels secure in my hand.
