I recently purchased the Birchwood 8" chef's knife and added the Birchwood Sharpening Steel. This steel is tungsten which is an extremely hard metal which slightly sharpens as well as hones the blade. The Birchwood cutlery blades are made from SG2 steel, which means you really need a very hard Sharpening Steel in order to account for the hardness. This steel is perfect for Japanese steels, but can also be used for Western and German cutlery. This is now the only Sharpening Steel I use in the kitchen.

Someone thought this honing steel through. It is 9 inches, a good length for jsut about any knife. The handle is a little chunky - in the best possible way so i can keep it stable. The guard is a nice size to feel safe.

You need to match you honing steel to the hardness of the knife you are sharpening. That is why I used the Miyabi Thungsten carbide honing steel which ensures the correct hardness to sharpen my Miyabi knives. This one has the added benfit of a beautiful Birchwood handle.

If you owned MIyabi Birchwood knives, it is advisable to must own this 9" Birchwood sharpening/honing tungsten steel as well. This works for mostly every Miyabi knives, will hone to precision and re-aligns the edge of the knife blade, it is very important to use a honing steel on a regular basis. It is made from the finest materials delivering high-performance and are exquisite.

Once you master the technique, you will use your honing steel every time you use your knives. this steel is designed for the Asian knives and in particular for the Miyabi line. Crafted as you would expect form Miyabi, made in Japan.

Miyabi knives are made from such hard steel that they need special honing steels to keep them performing their best in between sharpening. This steel compliments the Birchwood collection with it's gorgeous handle and details but will work well for all Miyabi knives.

Great steel for the Birchwood knives

This is a great tool for helping maintain the edge and sharpness on your Japanese knives. Since this steel is for Miyabi Birchwood or other Miyabi knives, the Tungsten steel will really get a nice edge back on your knives keeping the sharper longer. The handle matches the Birchwood handles on the knives, a nice complimentary look in the kitchen with the knives.
