Beautiful and Functional

This is such a beautiful knife with its hammered finish and round, redwood handle. But there's way more to it than that! It is an authentic Japanese knife that has a very thin blade and extremely small edge angle that makes it scalpel-like sharp. It makes chopping up an onion or celery so simple you'll feel like a chef. It is also made from a very hard steel so it's not only sharp but is going to hold its edge really well.
I would recommend this to a friend!

I added this little guy to my Artisan collection and my daughter seems to use it daily. The core is made from SG2 steel and surrounded by layers of nickel and stainless steel for additional protection. The handle is ever so comfortable with its D-shaped Cocobolo pakkawood handle. The hammered “Tsuchime” finish helps move food away from the blade while chopping.

This 5.5 inch santoku is perfect for small chopping jobs, whereas the 7 inch is maybe a little too big. Or even great for those who prefer a smaller santoku. The blade is extremely sharp and deters food from sticking due to the hand hammered blade.

The steel on this knife is top of the line. Sg2 steel is made with a powdered steel and then its forged. All the markers of a premium knife. The outer layers of softer steel protect the very rigid center layer, keeping it as sharp as can be. This is a very special knife.

Seki Santoku

Made in Seki, Japan, this santoku exudes true craftsmanship. Easily prepare meat, fish, and vegetables with this broad hammered finished blade and especially sharp cutting edge. The contoured rosewood handle shape makes for a very comfortable grip and effortless cutting.

If you are looking for a shorter Chef's knife, the Miyabi 5" santuko is something worth considering. Made in Seki Japan, this knife is made from SG2 micro steel which has the hardness you need for sharpness and edge retention. The pakkawood handle is extremely comfortable and feels just right even when using for long periods of time. The santuko is also sharper than the traditional chef's knife because the angels are set at 9.5 degrees which are extremely acute. Lastly, I love using a 5" blade. Accomplishes everything the longer blades do, but lighter and more compact.

Great size for the RV.

[This review was collected as part of a promotion.] Looked at several different knives in the Miyabi line. The materials used in the manufacture of the Artison line fit the use in an RV best for us. The handle also felt more comfortable in hand for me.
