Made with tough steel (FC61), this knife is bound to be extremely sharp to make all your santoku needs seamless. Plus, the handle has a great fit! This blade is great for chopping!

If you are looking for an entry level Japanese knife this is a good one to try. The Miyabi Koh, has a traditional Japanese looking handle that will actually fit comfortably
in the right or left hand. Unlike a true D shaped handle, it will not roll for lefties. The blade profile is Japanese but the steel is more German in temperament. It is forgiving, will not chip or nick, but can be honed back to sharpness with ease.

sharp blade

I am very happy with this knife. The handle is uniquely shaped and very comfortable to hold. Overall it is surprisingly light. The blade is made of very durable steel that goes through a double hardening process making a blade that is durable and sharp. It is also very easy to maintain its sharpness. The blade has a thin profile giving nice thin and accurate cuts. There is a lot of thought and design that went into this knife right down to the traditional Katana style watermarking above the blade edge.

[This review was collected as part of a promotion.] This 7 inch koh santoku is an amazing piece of equipment. Right out of the box it performed exceptionally well at several tests thrown at it. For the money this is by far the nicest tool in my kitchen. I am extremely satisfied with my purchase and will be purchasing more from this brand in the future.
