Rock Solid Daily Driver

[This review was collected as part of a promotion.] I work at a high-volume cocktail bar/ music venue and use this 3-4 times a week for garnish prep. Sometimes I will opt for a smaller Wüsthof paring knife depending on workload, but the Evolution has a tendency to produce better garnish and keep its edge longer. Maybe I just baby this one a bit more, although I’ve previously had to replace Wüsthofs and have yet to do the same with a Miyabi blade.

Like it was made for my hand

[This review was collected as part of a promotion.] This knife feels like a perfect extension of my hand; lightweight and nimble yet with enough substance to feel every minute movement of the blade. The blade and bolster shape also feel eminently safe in my grip, unlikely to twist or escape my hand.
