I gave an Evolution to my cousin and his wife since they were looking to start using 'grown up tools' in their kitchen. The kids were old enough and they just decided it was time. He thanks me every time we see each other, and occasionally I get pictures of something they have cooked.
This is that kind of knife, it inspires love and cooking creativity. It is a hybrid of Japanese and German knife making tradition. The handle is a perfect example. It is a little heavier like a German knife, but a little narrower like a Japanese knife. The steel that the blade is made of is German and the craftsmanship is Japanese. The combination is a hard durable blade that stays sharp for a long time. Hone it regularly and sharpen maybe once a year; you'll have it forever.
The shape of this knife 5-inch prep knife is all West. It will finely slice tomatoes and easily chiffonade herbs. It will cut a sandwich in half and butterfly a chicken breast. Dishwasher safe, but hand wash to retain the beauty and look of new.

Great knife for slicing and dicing!

I love the attention to detail on this lovely prep knife. From the smooth transition between blade and handle to the interesting logo on the blade As a perfect shape knife for chopping small amounts of veggies to slicing and dicing onions, it will get plenty of use in my kitchen. Meant to last a lifetime, the cutting edge certainly stays sharp and smooth unlike other Japanese brands that seem to nick a lot.

Great knuckle clearance...Hard, durable steel hand-honed in Japan. Like to say..best of both worlds. By the way, handle sits in palm perfectly!

Best multi-purpose knife

I have never seen a knife that is this shape and size and I don't know why there aren't more of them! It is great to use for so many different things, like cutting apple, peeling garlic, and chopping herbs. The handle on this knife is so comfortable to use and the curves make it easy to use.

The Miyabi Evolution line is one of my favorite and the prep knife is one of my most used knives in the kitchen. It is super sharp so can slice, dice, and chop with percision and it feels comfortable in my hand while using, which is very important.

amazing prep knife

This knife is the perfect size. Its bigger than a paring knife and smaller than my Chefs knife. I like that the handle is offset unlike a paring knife to allow easy use on a cutting board. The handle is very comfortable and nicely rounded. I like that it is a hybrid of both Western and Japanese cutlery bringing out the best of both. The blade is very sharp and the acute angle means thin accurate cuts and slices. The blade goes through a double hardening process to ensure a very durable and sharp blade that is easy to maintain.

[This review was collected as part of a promotion.] For those jobs where a big Chef’s knife is too large, and a paring knife is too small. Feels so good in the hand. Quickly becoming my “go to” for small prep jobs.
