A perfect inbetween knife. Size permits use as a paring/utility knife for something small, while the wider heel of blade allows for chopping something larger on the cutting board. Contoured handle and well rounded heel of blade and spine add to effortless cutting.

I love this prep knife, it has a narrow tip like a parer and still gives you knuckle clearance for chopping. Nice round handle for right or left handed people.

Not only is this Prep knife the shape I use most often in my kitchen this is also my favorite line of Miyabi knives. The FC 61 steel is extremely durable and chip resistant. The POM handle feels smooth and secure in my hand.

Great "Go Between" Knife

This prep knife is a great knife for those in between jobs; when the parer is too small but the chef knife is too big. It's perfect for small fruits and vegetables or slicing meats and cheese.
Evolution is made of an incredibly durable, chip resistant steel. With its razor sharp edge, it slices through anything like butter. I love the handle shape and size, perfect for my hand and durable enough to last a lifetime.

Great knife for most veggies, potatoes, and hard to cut rinds, like melon and squash. Miyabi is known for their Japanese craftsmanship with German steel. A perfect combo for knives that last a lifetime with a thin blade, yet durable from the ice-hardened process. Handle feels good and is comfortable.

Beautiful thin Japanese blade meets Western handle for a effortless cutting experience. The patented ice hardening process leaves this blade exceptionally hard yet chip and crack resistant. Because the blade is forged from FC61 steel it is able to retain its razor sharp edge longer. I love this prep knife because it is smaller than a traditional Chef's knife but sturdy and sharp enough to tackle all the same jobs.

I gave an Evolution to my cousin and his wife since they were looking to start using 'grown up tools' in their kitchen. The kids were old enough and they just decided it was time. He thanks me every time we see each other, and occasionally I get pictures of something they have cooked.
This is that kind of knife, it inspires love and cooking creativity. It is a hybrid of Japanese and German knife making tradition. The handle is a perfect example. It is a little heavier like a German knife, but a little narrower like a Japanese knife. The steel that the blade is made of is German and the craftsmanship is Japanese. The combination is a hard durable blade that stays sharp for a long time. Hone it regularly and sharpen maybe once a year; you'll have it forever.
The shape of this knife 5-inch prep knife is all West. It will finely slice tomatoes and easily chiffonade herbs. It will cut a sandwich in half and butterfly a chicken breast. Dishwasher safe, but hand wash to retain the beauty and look of new.
