[This review was collected as part of a promotion.] I love my Myabi chef’s knife but found that it was too large for some jobs. This knife is great for smaller jobs but big enough to use as a paring knife or chef’s knife. Very versatile, highly recommend

The tip of this blade follows the exact line you trace. This straight paring knife, like all Kaizen paring knives, is both elegant to use and beautiful to look at. The slim D-shaped handle tucks into the fingers confidently. The blade is both hard and light at the same time, making it glide through delicate fruits and hearty peels effortlessly. That's because the 64 layers of molten steel applied over the VG10 steel core hold a tight edge. Less work for more precise cuts.
Adding to the enjoyment of this phenomenal cutting tool is its beauty. The Damascus-style polishing showing the layers and, the linen Micarta handle with finishing details combine to make using and owning this knife a joy. Hone regularly. Hand wash. This knife will be sharp and beautiful for a lifetime.
A paring knife needs to be strong yet lightweight, rigid yet thin, and sharp sharp sharp. The concept of a paring knife made in the Japanese style is brilliant. The Miyabi Kaizen is delicate enough to maneuver comfortably in your hand yet sharp and thin enough to make the job a breeze. For a paring knife, I will now, always go with a Japanese knife.
The 3.5 pairing knife is wonderful for every day prep! The straight edge is very true to Japanese style cutlery. This line is made of high quality steel with a very comfortable handle and nice Damascus pattern on the blade. It is a great mix of quality and beauty.
This super sharp parer is great for small jobs like slicing apples, green bean tips or removing blemishes. The blade very pretty and the D shaped handle is comfortable to hold.
