The Miyabi Santoku comes in two sizes, 7 and 5 inches. My preference is the 7, but I have many family members who prefer the 5. Either way, this is a terrific chopping knife.
The width of a santoku, from tip to heel make it extremely stable to chop thick foods - a large roast, a butternut squash, an eggplant. The sharpness of the Kaizen also makes it easy to make elegant thin slices too. The hollow divots (called a Granton edge) reduce friction and allow food to slip away easily.
Adding to the enjoyment of this exceptional cutting tool is its beauty. The Damascus-style polishing showing the layers and the linen Micarta handle with finishing details combine to make using and owning this knife a joy. Hone regularly. Hand wash. This knife will be sharp and beautiful for a lifetime.

I love every inch of this knife. The micarta handle is very smooth and comfortable to hold. The blade is very sharp. The acute angle and thinness of the blade gives straight thin and accurate cuts. The Damascus style layering gives it such a unique look. The VG10 steel stays very sharp and is easy to maintain. All the hallmarks of quality Japanese cutlery is here including the watermarked edge as found in classic Katana blades.

A great Santoku knife

I love the Kaizen collection, I love the aesthetic of these Japanese knives and how beautiful the 64 layers of VG10 steel is on the blade. Even though the layers are pronounced in that beautiful flower Damascus design, it’s also subtitled in comparison to some other Miyabi blades. I love this santoku, it is the perfect all purpose knife. This knife is a workhorse in your kitchen for all sorts of tasks, mincing, slicing, chopping. The handle feels great in hand, contours nicely and the transition from handle to blade is comfortable. I love how durable this knife is, and that I can enjoy this very sharp Japanese knife for years to come.

This Kaizen santoku is a dream to cut with. The handle is very comfortable and perfectly balances the weight of the knife. And the signature Miyabi sharpness of the blade, seamlessly chops and minces any food. The blade is also ultra durable and strong with innovative hollow edge divets to help guide food up and off of it.

Santoku is great for chopping, dicing, mincing and chopping. This Japanese beauty makes all those tasks even more enjoyable. The Japanese steel is so sharp. The one of a kind design is beautiful. The handle is comfortable and as with most Japanese knives.

This Japanese chef knife, or santoku, is ideal for mincing, slicing, and dice. The more acute edge angle make for precision cutting of meat, fish and vegetables. Blade is exceptionally sharp and handle has a moisture resistant grip.
